2 12 oz packages of frozen or raw riced cauliflower
1 cup of mozzarella cheese
1 cup of Parmesan cheese
2 egg, beaten
1 teaspoon of Italian seasonings
Jar of pizza sauce
Salt and pepper, to taste
Optional** 4-5 slices of prosciutto & 1 cup of arugula, tossed in balsamic vinegar as toppings*

- Preheat your oven to 400.
- Since I don't own a microwave, to soften the cauliflower, I added the riced cauliflower to a pan, added a splash of water plus a pinch of salt, covered, and steamed for 5-6 minutes. If you do have a microwave, then microwave the cauliflower until soft.
- Then add your steamed cauliflower,1/2 cup of mozzarella, 1/2 cup of Parmesan cheese, eggs, and Italian seasonings. Season with a little more salt and pepper and combine.
- Take out a baking sheet and line with parchment paper. Form the crust into a thin pizza-like crust and bake for about 18-20 minutes, or until it's golden brown. Then, add as much pizza sauce, mozzarella, and Parmesan cheese as you like (I added about 1 cup of the sauce and 1/2 cup each of the cheese but that's up to you) and then bake until the cheese melts. I finished it off with fresh prosciutto and balsamic arugula and devoured this very quickly!
