Meatballs with a Simple Tomato Sauce

Ingredients:

Meatballs-

1 lb ground beef

1 lb ground pork

1 lb ground veal

1 large clove of garlic, minced (if it's small, do two)

1 cup of parmesan cheese

1 egg

1 cup of breadcrumbs

1/4 cup of parsley

1/4 cup of basil

1/2 cup of whole milk ricotta cheese

Salt and pepper, to taste

Simple Tomato Sauce-

Extra virgin olive oil

1 onion, diced small

4 cloves of garlic, minced

2 28oz cans of crushed San Marzano tomatoes

1 6oz can of tomato paste

1 tablespoon of parley

1 tablespoon of basil

Pinch of sugar

Salt and pepper, to taste

Serving size - 6

Approx time to make: 45 min

Directions:

  1. Preheat your oven to 375.
  2. Take out a large bowl and add all of the ingredients + 2 teaspoons of salt and 1 teaspoon of pepper. Mix with your hands until everything is incorporated. DO NOT OVER MIX or you'll end up with dense meatballs.
  3. Then, with an ice cream scoop, portion out each ball to your liking (rolling them in your hand to ensure they stay together). Just make sure they are all the same size so they cook evenly. Add them to a baking sheet lined with parchment paper or tin foil and bake for 30 minutes.
  4. While the meatballs are cooking, make your simple tomato sauce. Take out a large pot and add 1 tablespoon of olive oil. Bring it to a medium to low heat and then add in your diced onion. Season with a pinch of salt. Cook for 5 minutes, or until they get tender and translucent. Then, add in the garlic and cook on low heat for a minute or so. Season with another pinch of salt and also pepper. Then, add in the crushed tomatoes, tomato paste, fresh herbs (leave a little left to add in at the end), a pinch of sugar, plus 1 cup of water. Combine and bring the sauce up to a boil, then down to a simmer, cover and let it cook for 30 minutes. Taste for seasonings after it cooks for 30 minutes. Add in more fresh herbs right before you serve the sauce.
  5. Once the meatballs have cooked for 30 minutes, add them to the sauce. Cook on low for 10-15 minutes so the flavors can meld together.
  6. Garnish with basil, Parmesan cheese, and more ricotta cheese and serve with your favorite pasta!
