One Sheet Pan Chicken Dinner

There is nothing better than being able to make dinner in under 30 minutes. There's also nothing better than being able to do that, plus it being healthy and delicious! This my one sheet pan chicken dinner with zucchini and bell peppers. You're going to love it!

Ingredients-

3 chicken breasts

2 carrots, cut into thirds

2 celery stalks, cut into thirds

2 zucchinis, cut into spears

2 bell peppers, chopped into strips

2-3 tablespoons of dry white wine

1 tablespoon of butter

1 tablespoon of extra virgin olive oil

Salt & pepper

Garlic powder

1 lemon


Serving size- 3-4

Directions:

  1. Preheat your oven to 400.
  2. Next, dice up your vegetables so they are all the same size. You want to ensure uniform cooking time. Place the carrots and celery down on the far edge of the pan, and then place the chicken breasts on top of them. Then place the zucchini in the middle, and the bell peppers at the other end. Season the pan with 1 tablespoon of salt, pepper, and garlic powder and spread over everything. Drizzle everything with olive oil and mix so the seasonings are dispersed. Then, splash the white wine over the pan. Cut the lemon in half, use the one half to slice and put on the chicken, and the other half to squeeze on the vegetables. Cut the butter into small chunks and add to the pan.
  3. Roast in the oven for 25 minutes, or until the chicken is completely cooked through and you have yourself a delicious dinner!
