Shaved Brussels Sprouts Salad with Proscitutto

This is such an easy salad to make for a party! Especially for the holidays! It takes no time at all to make, there are minimal ingredients, and the taste is outstanding. Make sure to add this to your Holiday rotation.

Ingredients-

1 pounds of Brussels sprouts, grated on Box Grater or sliced thin

5-6 slices of prosciutto

Juice and zest of 1 lemon

1/2 cup of extra virgin olive oil (more if you like)

1 tablespoon of champagne vinegar (you can use white, apple cider, or rice vinegar for this)\

Pinch of crushed red pepper

Parmesan shavings (not pictured, but great addition to this as garnish!)

Salt and pepper, to taste

Serving size- 6

Directions

  1. Start by prepping your Brussels sprouts. You can prepare them two different ways. If you have a box grater you can grate them and form "shavings" of veggies, or you can run your knife length wise in small strips and form "shavings" that way. Both are fantastic. If you start with the grater and don't feel like finishing, then do half grated and half sliced. That creates a nice texture! whatever you feel like doing is OK. Place them into a large bowl.
  2. Crisp your prosciutto in a saute pan in olive oil for a couple minutes. Just so you get a nice crunch throughout your salad. Add to the bowl with the sprouts.
  3. Next, add in the juice and zest of 1 lemon, olive oil, vinegar, crushed red pepper, and salt and pepper to the bowl. Toss until everything is combined. Taste for seasonings. Garnish with Parmesan shavings and more lemon zest and get ready to wow your guests!
