Warm Brown Rice Salad with Grilled Chicken, Craisins, & Goat Cheese


2 cups of uncooked brown rice

3.5 cups water

2 chicken breasts

2 teaspoon of cumin

2 teaspoons of ground mustard

2 teaspoons of garlic powder

2 teaspoons of seasoned salt

2 teaspoons of pepper

Extra virgin olive oil

1/2 cup of chopped olives, any kind you like

1 can of rinsed chick peas

1 cup of craisins

2-3 tablespoons of crumbled goat cheese (save some for garnish)

1/4 cup of sunflower seeds (you can decide how much you like)


1 tablespoon of whole grain mustard

3-4 tablespoons of champagne vinegar

1 clove of minced garlic

1/2 cup of extra virgin olive oil

Salt and pepper, to taste

Serving size- 6


  1. Start by making your rice. Take out a medium sized pot and fill with 2 cups of brown rice and 3.5 cups of water. Season with 1 teaspoon of cumin, ground mustard, garlic powder, seasoned salt and pepper. Bring this to a boil, then down to a simmer, cover and cook for 30 minutes, or until the liquid has been absorbed.
  2. Meanwhile, season your chicken breasts with the same seasonings you did the water (1 teaspoon of cumin, ground mustard, garlic powder, seasoned salt and pepper). Then, take out a saute pan, and add a little olive oil to the pan and grill the chicken for 4-6 minutes on each side until chicken is cooked through. Remove from the pan and allow to rest for 5-10 minutes.
  3. Next, make your vinaigrette. I like the make the vinaigrette in the bottom of the bowl I am going to serve the salad in to make clean up easier. So, add the mustard and minced garlic to the bowl first, then add in the vinegar. Whisk together. Next, slowly whisk in your olive oil until everything gets emulsified. Season with salt and pepper. Taste for seasoning here. If you think it taste too vinegary, add more oil, if it's too oily for your like add in a little more vinegar.
  4. Once the rice has cooked, add to to your bowl you made the vinaigrette in. Then add in the chopped olives, chick peas, craisins, goat cheese, and sunflower seeds and toss. Taste for seasonings. Slice, cube, shred (however you like your chicken in salads), your chicken and add to the bowl. Garnish with more goat cheese, craisins, and sunflower seeds and enjoy a delicious guilt-free meal!
