Scrimp Scampi

This Shrimp Scampi recipe pays homage to my favorite Italian restaurant in South Philly: Villa de Roma.

Ingredients

1 loaf of good Italian bread

Extra virgin olive oil

Salt and pepper to taste

1 clove of garlic, peeled

1 pound of jumbo shrimp, peeled and deveined

1 stick of unsalted butter (you can use salted too)

1-2 teaspoon of garlic powder

Couple dashes of hot sauce

1 lemon- juice and zest

Salt and pepper to taste

Parsley to garnish (optional)

Directions

  1. Preheat your oven to 350.
  2. Cut your loaf of bread in half and drizzle with a little extra virgin olive oil and salt and pepper. Put in the oven and bake for 5 minutes or so, or until the bread is warm and almost golden.
  3. While your bread is baking, prepare your shrimp scampi. It takes 5 minutes to do this! Put your shrimp, butter, garlic powder, hot sauce, lemon juice and zest, and salt and pepper into a cold saute pan. Cook this all together on medium to high heat until the shrimp is cooked through and the butter is melted. It usually takes the time for the butter to melt, for this dish to be completed. That is how easy this thing is!! The shrimp should be pink and juicy, but not overcooked.
  4. Take your bread out of the oven, and rub your garlic clove all over the bread. Make sure to do this when the bread is hot because the garlic flavor really gets into the bread when it's warm.
  5. Top your shrimp scampi with parsley and dip your bread into that glorious sauce and enjoy!!
