BBQ Chicken Lettuce Wraps

BBQ Chicken Lettuce Wraps


1/2 cup ketchup

2 tablespoons soy sauce

1 tablespoon brown light

1 tablespoon apple cider vinegar

2 tablespoons Worcestershire

3 cloves garlic

1 shallot, quartered

1 teaspoon paprika

1 teaspoon chili powder

1/2 teaspoon cumin

1/2 teaspoon sriracha

1/2 teaspoon salt and pepper

6 boneless chicken thighs, about 2 pounds

1/4 cup chopped cashews

2 tablespoons chopped chives

12 pieces of butter lettuce, washed and dried

Salt and pepper, to taste


  1. Add all of the ingredients up to the chicken into a bowl and whisk. Add the chicken pieces to the bowl and let marinate for 30 minutes or longer if you have the time. Once the chicken is done marinating, add the marinade to a pot and boil until thickened.
  2. Once ready to grill, turn the grill up to a high heat. Cook the chicken about 20 minutes, flipping halfway through, and basting the chicken every few minutes. Cook until an instant read thermometer registers to 165 degrees. Remove the chicken from the grill and rest for 5 minutes. Chop into small pieces and add to bowl along with the cashews and chives. Taste for seasoning.
  3. To serve, add roughly 1 cup of your chicken mixture to each piece of lettuce and enjoy!
