Chickpea Salad Sandwich

Makes 2-3 Sandwiches | Total Cook Time: 15 minutes

Chickpea Salad Sandwich


2 cans rinsed and drained chickpeas

1 tablespoon fresh dill

1 tablespoon fresh parsley

1 teaspoon capers

1 shallot, minced

1/4 cup minced celery

1/4 cup minced pickles

1/2 cup nonfat Greek yogurt

1/2 cup Mayo

1 tablespoon whole grain mustard

1 teaspoon Calabrian chilis (optional)

2 tablespoons apple cider vinegar OR lemon juice (or both if you like it acidic)

Sliced bread



  1. Start by draining and rinsing your chickpeas. Mash them up slightly (still leaving some in their natural form) and add them to a large bowl, along with your chopped celery, pickles, herbs, and capers.
  2. Then, in a separate mixing bowl add the yogurt, mayo, mustard, chilis and vinegar or lemon. Season with a pinch of salt and pepper, taste and adjust accordingly. Pour your dressing over the chickpea mixture and combine. Taste for seasoning again and adjust if necessary.
  3. To assemble, toast two pieces of bread and spread hummus on both sides. Spoon on as much salad as you like, cut in half and enjoy!
