1 lb. boneless pork loin, cut into cubes
1 lb. chicken breasts, cut into cubes
1/4 cup low sodium soy sauce
1/2 cup chicken stock or water
2 bay leaves
1 tablespoon pink peppercorns (or regular peppercorns)
4 garlic cloves, whole
1 shallot, chopped
1 tablespoon sliced ginger
1 bag frozen veggies (I used broccoli, cauliflower, and carrot)
2 teaspoons sesame oil
1 bag of miracle rice, follow cooking instructions on package
Salt and pepper, to taste
Serving size- 4
- Take out a pot and add in the chicken, pork, soy sauce, stock, bay leaves, peppercorns, garlic, shallot and ginger. Bring this up to a boil, then down to a simmer, cover (with the lid ajar) and cook for 1.5-2 hours. The longer the better! Once the meat is tender and is falling apart remove the big pieces of ginger, shallot, bay leaves, and most of the peppercorns. You should have a thick, glossy sauce left.
- In the last 10 minutes of your meat cooking, I microwaved my bag of vegetables, then tossed in a little sesame oil and did the same with the miracle rice.
- Serve the pork, veggies, and rice in a big bowl and drizzle the sauce on top!
