Meatball Stuffed Biscuits

Ingredients:

1/2 pound ground beef

1/2 pound ground pork

2 cloves garlic

1/2 cup parmesan cheese

2 tablespoons ricotta cheese

1 egg

1 cup Panko bread crumbs

2 tablespoons parsley

Extra virgin olive oil

2 can of Pillsbury Grands biscuits

2 tablespoons butter, melted

1 cup of your favorite marinara sauce

Directions:

  1. Preheat your oven to 375.
  2. Next, make your meatballs. Add the ground meat, garlic, parmesan cheese, ricotta cheese, egg, bread crumbs, parsley, salt and pepper to a bowl and mix until combined. Form into 16 meatballs.
  3. Add olive oil to a frying pan and brown your meatballs on all sides then set aside.
  4. Remove each biscuit from the can and wrap the biscuit around each meatball and seal it closed. Once 16 biscuit balls are made, add them to a greased cast iron skillet or 9x13 casserole dish. Bake for 30 minutes or until golden brown.
