Potato Salad

Potato Salad


4 pounds russet potatoes

1/2 teaspoon salt

1 cup mayonnaise

1/4 cup Wishbone Italian Dressing

1 tablespoon yellow mustard

1 tablespoon apple cider vinegar

1/3 cup minced onion

1 cup minced celery

1/2 cup chopped sweet or dill pickles

4 hard boiled eggs, coarsely chopped



  1. Boil the potatoes in a large pot with 1/4 teaspoon salt until tender. Once potatoes are cooled, drain, peel and cube the potatoes and add to a large mixing bowl.
  2. Combine the mayonnaise, salad dressing, mustard, vinegar, 1 teaspoon salt and pepper. Add onion, celery, pickles, and eggs to the cubed potatoes and toss lightly.
  3. Place the potato salad to a serving bowl and sprinkle with paprika, cover and chill for at least 4 hours.
