Shrimp and Pineapple Skewers

Serves 6 | Total Cook Time: 15 minutes

Shrimp and Pineapple Skewers

Ingredients:

1/4 cup extra virgin olive oil

2 Limes

2 tablespoons chili powder

1 teaspoon garlic powder

2 pounds shrimp, peeled and deveined

2 cups cubed pineapple

Salt and pepper, to taste

Directions:

  1. Add the olive oil, juice and zest of 2 limes, chili powder, garlic powder and about 1/2 teaspoon of salt and pepper to a bowl and mix. Taste for seasonings.
  2. Add the shrimp and pineapple to a skewer (about 5-6 shrimp and 4 pineapple pieces per skewer) and then brush the marinade all over the skewers.
  3. Grill on high heat about 1-2 minutes per side, or until the shrimp is cooked and the pineapple has caramelized. Finish with a sprinkle of salt and enjoy!
