6 cups chopped watermelon
1 large cucumber, chopped
1 shallot, minced
1/2 cup crumbled goat or feta cheese
1/4 cup fresh basil, roughly chopped
2 oranges, juiced and zested about 1/4 cup juice
Extra virgin olive oil
Salt and pepper, to taste
1. Add the watermelon, cucumber, shallot, goat cheese, and basil to a bowl. Add the orange juice and zest, 3 tablespoons of extra virgin olive oil, and 1/2 teaspoon salt and pepper. Gently toss and taste for seasonings. Enjoy!
