Watermelon Cucumber Salad


6 cups chopped watermelon

1 large cucumber (about 3 cups) chopped

1 shallot, minced

1/2 cup crumbled goat cheese (or feta)

1/4 cup fresh basil, roughly chopped (feel fre

2 oranges, juiced and zested (about 1/4 cup juice)

Extra virgin olive oil

Salt and pepper, to taste

Serves 6

Approximate time to make: 15 minutes


  1. Add the watermelon, cucumber, shallot, goat cheese, and basil to a bowl. Then add the orange juice and zest, 3 tablespoons of extra virgin olive oil, and 1/2 teaspoon salt and pepper. Gently toss and taste for seasonings. Enjoy!
